  • 4 orange roughy, cod, or sole fillets, thawed
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1/2 medium zucchini, sliced
  • 1/2 sweet red pepper, cut into strips
  • Salt and pepper to taste
  • Optional: dried oregano, thyme, paprika, breadcrumbs

  1. Preheat your oven to 450°F.
  2. In a small bowl, mix the mayonnaise, grated Parmesan cheese, lemon juice, and optional herbs and spices (such as dried oregano, thyme, or paprika) to create a creamy mixture.
  3. Place the thawed fish fillets in a single layer in a greased baking dish.
  4. Arrange the sliced zucchini and red pepper strips on top of the fish fillets.
  5. Season the fish and vegetables with salt and pepper to taste.
  6. Spoon the mayonnaise mixture over the top of the fish fillets and vegetables, spreading it evenly.
  7. Optionally, you can sprinkle breadcrumbs mixed with grated Parmesan cheese over the top for added crunch and texture.
  8. Cover the baking dish with foil and bake in the preheated oven for 18-22 minutes, or until the fish is cooked through and flakes easily with a fork. Adjust cooking time based on the thickness of the fish fillets.
  9. Remove the foil during the last few minutes of baking to allow the top to brown, if desired.
  10. Once done, remove it from the oven and let it rest for a few minutes before serving.
