Ingredients:
- 4 orange roughy, cod, or sole fillets, thawed
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1/2 medium zucchini, sliced
- 1/2 sweet red pepper, cut into strips
- Salt and pepper to taste
- Optional: dried oregano, thyme, paprika, breadcrumbs
Instructions:
- Preheat your oven to 450°F.
- In a small bowl, mix the mayonnaise, grated Parmesan cheese, lemon juice, and optional herbs and spices (such as dried oregano, thyme, or paprika) to create a creamy mixture.
- Place the thawed fish fillets in a single layer in a greased baking dish.
