Ingredients:
- 1 can (11 ½ oz.) Mandarin oranges, undrained
- 4 eggs
- 1/2 cup oil
- 1 tsp vanilla extract
- 1 package yellow pudding cake mix
- 1 can (20 oz.) crushed pineapple, undrained
- 1 package (3 oz.) vanilla instant pudding
- 1 carton (8 oz.) cool whip
- Mandarin orange slices for garnish (optional)
- Toasted coconut flakes for garnish (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch cake pan.
- In a mixing bowl, whisk together the undrained mandarin oranges, eggs, vanilla and oil.
- Stir in the yellow pudding cake mix and beat until well mixed.
- Pour the batter into the greased cake pan and bake for 30 minutes or until the cake is done. Leave the cake in the pan to cool.
- While the cake is cooling, make the topping. In a separate bowl, mix the undrained crushed pineapple and vanilla instant pudding until the pudding is moist. Stir in the cool whip.
- Once the cake is completely cooled, spread the topping mixture evenly over the cake in the pan.
- If desired, decorate the cake with mandarin orange slices and/or toasted coconut flakes on top.
- Chill the cake in the refrigerator for at least 4-6 hours, or overnight for best results, before serving.
